For this Easter recipe, all you have to do is use a bunch of asparagus, trimmed and shaved or thinly sliced – the choice is yours as to your preference.

Ingredients

1 bunch asparagus

3 tablespoons olive oil

1/3 cup pine nuts

1/3 cup dried cranberries (or raisins)

1 pinch salt

lemon juice

salt and pepper to taste

parmesan cheese (optional)

Instructions

Break off or trim the woody ends from the asparagus and discard. Set the spears aside.

Heat the olive oil in a skillet over medium heat. Stir in the pine nuts, cranberries, and salt. Cook and stir until the pine nuts start to look translucent, about 5 to 6 minutes.

Add the asparagus spears and cook, adding a little more olive oil if needed until stalks are bright green and tender, about 5 to 8 minutes.

Serve on a platter with the cranberries and nuts spooned over the top of the asparagus. Top with a bit of lemon juice and parmesan cheese.

    Easter is a Busy Day

    While moms and dads are busy preparing the Easter meal, kids are burning off steam from the sunrise service at church in the backyard with a conventional egg hunt, or perhaps playing some outdoor games while mom and dad are busy with the meal. As a family, you may take in a local Easter parade, go to a local petting zoo to see some baby animals, attend an Easter Egg Roll, or play some Bunny Tag in the backyard.     This is an absolute favorite of mine. This dish is a fresh take on normal pasta salad, featuring roasted salmon and English peas making it colorful and full of freshness.

    Preheat your oven and lightly grease your baking tray or use parchment paper. Place your salmon pieces on the tray and season with coriander, salt, and pepper. Roast them in the oven until the salmon is cooked to your preference or the ideal cooking time of 13 to 15 minutes.

    Cool the salmon completely and then flake it into large pieces. While your salmon is cooling, cook your pasta according to the package instructions. You can use whichever type of pasta you like best. Add the peas during the last minute of cooking. Be sure to reserve some of the pasta water for the sauce and drain the remaining water. Return the pasta to the pot.

    In a large skillet, melt 2 tablespoons of butter over medium heat. Add onions, salt, and pepper. You can even add a splash of wine to the mix and cook it into a syrup for approximately 3-4 minutes. Add the pasta and the reserved water and bring to a simmer.

    Remove the mixture from the heat and add an additional 2 tablespoons of butter and finish it by gently folding in your salmon and dill. An absolutely delicious spring salad to accompany your meal! You can get the recipe here.

    Easter just would not be complete without deviled eggs! My mother made simple deviled eggs (blended hardboiled egg yolks mixed with mayo, a bit of mustard, and then added back to the halved egg whites and topped with paprika) for my dad many times throughout the year – but especially during Easter with all those hardboiled eggs we needed to eat! This is a delicious, upscale version of the quick and simple deviled egg.
