Show of hands, is anyone else jumping for joy because it is National Pancake Day or is it just me? I thought so! Pancakes are not just for breakfast anymore – the entire family loves it when we do a “breakfast for dinner” evening, and I can’t think of a more perfect day to have pancakes for dinner!
Nobody wants the same boring pancakes all the time though. That’s why I am thrilled to be sharing six yummy pancake variations from our friends at FamilyFun magazine which are sure to get your little ones (and not so little ones) excited to help out in the kitchen!
Chocolate Peanut Butter Chip Pancakes
- 1 cup of your favorite pancake mix
- 1/4 cup unsweetened cocoa
- 1 tablespoon of sugar
- 1/3 cup peanut butter chips
- water
Red Velvet Pancakes
- 1 cup of your favorite pancake mix
- 2 teaspoons unsweetened cocoa
- 2 teaspoons red food coloring
- water
Lemon Ricotta Pancakes
- 1 cup of your favorite pancake mix
- 1/4 cup ricotta
- zest of one (1) lemon
- water
Apple Cinnamon Pancakes
- 1 cup of your favorite pancake mix
- 1/3 cup apple pie filling
- 2 teaspoons cinnamon
- water
Mandarin Poppy Seed Pancakes
- 1 cup of your favorite pancake mix
- 4 teaspoons poppy seeds
- 1/3 cup canned mandarin oranges (drained)
- water
Pumpkin Spice Pancakes
- 1 cup of your favorite pancake mix
- 1/4 cup pumpkin puree
- 2 tablespoons sugar
- 3/4 teaspoon pumpkin pie spice
- water
